Ziti with Sweet Onion Sauce
I love it when my Italian mother in law makes this recipe. I think you will like making it too.
Note- it takes 2 hours to cook if you are going to make it on the stove (or) Make this in the slow cooker 8 hours on low.
Ingredients:
3 lb bag of yellow onions, quartered (skins removed) and rinsed under cold water
3 tomatoes from can of Tutta Rossa Whole Tomatoes with basil (or) 7 Tbsp Crushed Tomatoes (or) 3 Fresh Plum Tomatoes
2-3 pork ribs
1 package top brasciole boneless (1/2 lb approx) (you can make without this- if you do increase pork ribs to 5)
salt (1/4 tsp)
pepper (1/8 tsp)
oil
basil
parsley
1/2 cube beef boullion
Directions:
Put the skinned and quartered onions into a pot after rinsing (do not dry off completely- you want some moisture on the onions)
Make brasciole- spread meat with a little chopped garlic, chopped parsley and grated pecorino or parmesan cheese and pepper. Roll up and secure with a toothpick. Put into pot with onions.
Add pork ribs to pot and a little oil (1 Tbsp) and beef boullion (small piece- maybe the corner) or broth if you wish (1 Tbsp)
Squish tomatoes with your hands and add to the pot.
Add salt (1/2 tsp), pepper (1/8 tsp) and a little basil
Cover pot. Start cooking on medium high and reduce to medium low after first 30 mins. Stir frequently so onions don’t stick to the pot. Cook for approx 2 hours covered.
If making in slow cooker just put everything into the slow cooker and cook on low for 8 hours.
Turn off heat and let cool. Take out meat to serve separately.
Run onions through a food processor in batches to make smooth.
Pour sauce over pasta and sprinkle with paremsan cheese.
