MONDAY: Mom’s Pan Fried London Broil
Elise at Simply Recipes has a method of making London Broil thatl does not require marinating but instead uses a dry mustard, salt, pepper and butter. Alternatively, you might like to make the Grilled Marinated London Broil we posted two weeks ago. Top Round London Broil is on sale at ShopRite for $1.49 lb this week. It is also on Sale at A&P through Monday, the 18th (USDA Choice Boneless Beef Top Round London Broil Western Grain Fed Beef, Twin Pack. $1.37lb. Limit 1.) Make a little extra so you will have some leftovers for Wednesday.
TUESDAY: Miso-Marinated Cod
I once had a Miso-Marinated black cod at a Japanese restaurant that was fantastic. Since Cod is on sale at A&P for $4.99 lb I thought it might be nice to see if I could replicate that meal. Rasa Malaysia has a recipe for Nobu Black Cod with Miso that looks great. Can’t wait to give it a try.
WEDNESDAY: Spinach Salad with Leftover London Broil
This recipe was inspired by our reader Emily who wrote and told us that she made the recipe we posted for grilled marinated london broil and used the leftovers for a spinach salad. We thought that was a great idea! Since the pan fried london broil is made with dry mustard, why not make this dijon mustard vinaigrette from Life’s Ambrosia for the salad. We plan on using slices of red onion and hard boiled egg in our salad along with the thin strips of meat.
TURSDAY: Spaghetti Carbonara
Hoboken Mom’s Italian mother in law (Nonna) makes this meal and it is delicious. We liked this recipe from The Amateur Gourmet which uses wine. Of course, you can alway just omit the wine and the parsley and make the traditional version just like Nonna.
FRIDAY: Corn, Scallion and Potato Fritatta with Green Salad
Corn is on sale at ShopRite for $0.16 each this week. We decided a nice fritatta paired with a salad would be a good way to use up the corn. I plan to serve mine with the leftover carbonara– if we have any. This recipe comes from Epicurious.
SATURDAY: Hot Dog Octopus for the Kids and Hot Dogs for the Adults served with Vinegar and Oil Potato Salad
Because Monday is Memorial Day, we are dreaming of all things summer. Since Ball Park Beef Franks are on sale at ShopRite (12.8oz to 1lb) for $1.49 (a coupon matchup that makes the deal even better). We will be making the Hot Dog Octopus for the kids following the instructions from About.com and using mustard to add eyes and a mouth. Don’t forget that hot dogs are a choking hazard for young children. The American Academy of Pediatrics (AAP) recommends not serving round, firm food like hot dogs to children younger than 4 unless it is chopped completely and you might want to read this from the FDA before deciding if the Octopus is appropriate for your child. Hoboken Mom plans to only give this to her 5-1/2 year old. Hoboken Mom is eager to try the recipe for potato salad from Kevin Weeks’ Seriously Good. This potato salad uses red onions, yukon gold potatoes, cider vinegar and dill; although I plan to omit the dill.
SUNDAY: Slow Cooker Pork Spareribs
If you feel like making ribs this weekend, but, doesn’t want to be stuck in the kitchen or in front of the grill for hours, the slow cooker is the way to go. Hoboken Mom is eager to try this recipe from Taste of Home for Slow Cooker Pork Spareribs. So- enjoy the day out with your family and come home to a pre-memorial day feast that is already done. Pork Spare Ribs are on Sale at A&P until Monday May 18 (Master Choice Pork Spare Ribs Western Grain Fed Pork, previously frozen (sold in Cryovac) $1.37 lb. Limit 1.) We plan to buy ours on Sunday May 17 and defrost them in time for grilling.
Tomorrow is Memorial Day. We plan to make hamburgers! 80% Ground beef is on sale at ShopRite for $1.69 lb (Wed 20th-Sat 23rd only) so, don’t forget to grab some to put in the freezer this week if you plan to make hamburgers too.
