Menu Suggestions for the Upcoming Week
Here are some suggestions for what to make this week based on the store sales.
MONDAY: Pan Fried Flounder with Rice and a Vegetable
This recipe went over so well in Hoboken Mom’s house two weeks ago that we decided to suggest it for today. Flounder is on sale at ShopRite this week for $2.99lb (that’s even better than the $3.99lb it was on sale for at A&P two weeks ago so, we couldn’t resist buying it). Dip flounder in egg and cover with bread crumbs. Pan fry in butter. Serve with rice and veggies of your choice. BirdsEye Boxed Sauced Vegetables or Select Steamfresh and Bagged Vegetables 8-16oz are on sale for $0.79 at A&P through Sunday.
TUESDAY: Monte Cristo Sandwiches or Split-Pea Soup
Do you have leftover ham in your fridge or freezer? We do- and we have a few ideas for how you can use it up. Make the Monte Cristo Sandwiches from the Food Network (Sarah’s Secrets) and substitute ham for the turkey. Of course, you can make this with turkey or chicken too. This seems to be a good way to clean out the fridge of your extra meat. Don’t like the idea of a sandwich for dinner, why not make this Split-Pea Soup from Martha Stewart Living? Or- you can make both (and have leftovers for lunch). Soup and a sandwich makes a nice pairing.
WEDNESDAY: Leftover-Lamb Curry
If you made lamb like we did this past Sunday, you have some leftover lamb. We think that this recipe from myrecipes.com sounds great. If you aren’t sure what chutney is, click here for a good explanation. Hoboken Mom is planning on taking a trip to Trader Joe’s on River Road in Edgewater to get some. It’s a fun trip for the kids, because they like to go shopping with the child sized grocery carts and, if you find Petey the Parrot- a stuffed animal parrot, you get a special treat (in the past we have received a lolly pop or fruit leather).
THURSDAY: Frisée Aux Lardons (or) Eggs Jeannette
Have a lot of hard boiled eggs in your fridge or eggs that are approaching their expiration date? After reading this article on egg safety that we found very informative from slashfood.com, you might want to try the Frisée Aux Lardons which appears on the same page. This would work really well with spinach as well, if you aren’t a big frisée fan. Alternatively, you might want to try this recipe from Jacques Pépin for Eggs Jeannette (a type of stuffed egg his mother made)- which we found on publicradio.org. It is part of their Splendid Table series. Of course, if either of these recipes don’t appeal to you, there’s always egg salad (take some eggs, mash together with mayonnaise, add some mustard to taste and some finely diced pickles if you wish for texture and voila)!
FRIDAY:Pizza with Pineapple and Ham
Do you still have a bit more leftover ham in the freezer? The Food Network has a recipe (Giada De Laurentis) that we think sounds yummy and pizza is always a good choice on a Friday. Pineapple is on sale at A&P through Sunday for $2.99 each (she calls for canned but… why not use fresh and then have extra for some healthy snacking). Polly-O Mozzarella Cheese (16oz) is on sale at A&P for $1.99 through Sunday. Of course, you can always just make marinara too.
SATURDAY:Fish Tacos with Salsa Verde and Radish Salad
This recipe from Everyday Food is simple and yummy. The cilantro lime sauce really makes the recipe. If you don’t like radishes- try it without. Tilapia Fillet (frozen) is on sale at A&P this week for $3.99 for a 12 oz bag. We like being able to go grocery shopping once a week. Using frozen items towards the end of the week is a good way to keep from having to run to the grocery store and do a big shopping trip mid-week. You may have to run into one of the markets on Washington street to get the cilantro though.
SUNDAY:Lighter Chicken Pot Pie
Metro Mom posted on twitter that when she recently made this recipe from Everyday Food with her kids, they had a blast painting the layers of phyllo dough. Because Tyson Boneless Chicken Breasts are on sale at ShopRite this week for $1.99lb, we think it is a good choice for this week. We plan to put ours in the freezer to keep them fresh so we can make this meal today.
